Mezcal production in San Luis Potosí is unique in Mexico, because it is done predominantly in ‘Haciendas’, using semi industrial methods dating to 18th & 19th centuries.

Maguey 'Verde'

Agave salmiana

One of the few agaves that resist the harsh conditions of the Mexican high plateau, it is normally harvested from ample wild populations.

Yields ~ 1L of mezcal per 30 kgs of Agave, ~ 12 to 16 years life cycle / maturity
