‘Palenque’

Common name for an artisanal mezcal facility in Oaxaca. Catarino’s palenque is small and rustic, yet delivers, through the experienced hands of Don Catarino, a splendid cuishe mezcal with high minerality and floral notes.

An agave that is endemic to dry regions of Oaxaca, harvested mostly from wild populations, it is commonly used for fences, due to its elongated form & resistance. 

Yields ~ 1L of mezcal per 20 kgs of Agave, ~ 10 to 14 years life cycle / maturity.
