‘Palenque’

Common name for an ancestral mezcal facility in Oaxaca. This is a really nice palenque that features clay pot distillation, which is customary for the Sola de Vega region.

Agave americana var. oaxacensis

Although part of the genus americana, one of the top agaves in terms of geographic distribution, this subspecies is found in a narrow area in the state of Oaxaca.     

Yields ~ 1L of mezcal per 25 kgs of Agave, ~ 8 to 10 years life cycle / maturity.
